Hot Smoked Salmon
Using high quality salmon, farmed and processed in Orkney, Ian uses his tried and tested brine recipe and hot smoking skills to produce seriously tasty, moist and ready to eat salmon.
Smoked Orkney Mature White Cheddar
Using Orkney’s very own, award winning and Protected Geographical Indication (PGI) mature Orkney Cheddar, Ian creates an end product that retains the great taste and texture of the cheddar, but which is enhanced with a mellow smoky flavour.

Smoked Salmon Pate
Humes hot smoked salmon is combined with cream cheese, crème fraiche, breadcrumbs, capers, chives and seasoning to produce a deliciously light, smooth and tasty, spreadable pate – ideal for spreading on oatcakes, toast, crackers or freshly made bread.
Using quality, north sea mackerel fillets, caught in an area that has been independently certified to the MSC’s standard for a well managed and sustainable fishery, Ian uses his tried and tested brine recipe and smoking skills to produce deliciously moist, ready to eat, hot smoked mackerel – either plain, or with a range of flavour enhancing options (pepper, cayenne pepper or paprika).
Whilst not an obvious Orkney delicacy, smoked olives crept onto our product list towards the end of December 2017, following a suggestion from one of our customers.Using plump, gorgeously green, unpitted Sicilian olives, subtly smoked over oak wood, then immersed in rapeseed oil – these glossy gems retain their true flavour and texture, but with a hint of smoke.Great for use in salads, snacking and tapenades.
Plump and juicy mussels are oak smoked and immersed in rapeseed oil (which keeps the mussel meat moist and enhances the flavours).The smoky mussels are great in pasta and risotto dishes, as part of a seafood platter, on a seafood pizza – or just eaten straight out of the tub! The remaining flavoured oil is also ideal for adding to sauces, cooking and drizzling on salads, bread, etc.
